What kills a sweet flavor in cooking that is NOT derived from sugar or any other additive?

I am making a stew but have had this problem before in other sauces. I think it's from the carrots. I hate sweet sauces and don't add sugar or stevia or any sweetener!!! I also don't want to just add a ton of salt. I am looking for an additive that will cause a chemical reaction without changing the overall flavor - just get rid of the sweet taste.
